How to make stuffed Aloo Parathas

For the Paratha dough
- 2 cups Shivtara Chakki Atta
- 1 cup Shivtara Maida
- 1 tbsp Oil
- salt to taste
For the Potato stuffing
- 3 large boiled and mashed Potatoes
- 1 finely chopped Onion
- 1/2 cup chopped Coriander leaves
- 1/2 cup chopped Mint leaves
- 2 finely chopped Green Chillies
- 1 tsp Jeera/Cumin seeds
- 1 tsp Chilli powder
- 1 tsp Turmeric powder
- 1 tsp Garam masala powder
- 1 tsp Chaat masala
- 1 tbsp Lemon juice
- Salt to taste
Method
Mix Shivtara Chakki Atta, Shivtara Maida & salt together in a mixing bowl. Add enough water and knead to a soft dough. Add some oil over the dough ball and cover the bowl with a damp cloth to rest for 30 minutes.
In the meantime, mix all the ingredients for the stuffing together and set aside until the dough has finished resting.
Next, divide the dough and the stuffing into equal round balls. Flatten the dough ball, out the stuffing ball in the centre and wrap the dough ball around it.
Roll this dough ball stuffed with the potato filling out in to a thick paratha or chapati.
Cook on a hot Tava or frying pan on both sides till ready. Add ghee as you cook it for added taste and crispy outside.
