Mix Shivtara Maida, oil & salt together in a mixing bowl until well blended. Add enough water and knead in to a soft dough. Let this rest for 15 minutes before dividing in to 15 portions.
In the meantime, mix all the ingredients for the stuffing together and set aside until the dough has finished resting.
Take a portion of the dough, roll in to a ball and roll out in to a flattened roti.
Heat your tava or frying pan and put the paratha on it. Pour some of the egg mixture in the middle of the cooking paratha and fold the paratha inwards over it to cover the whole egg mixture.
Flip over once cooked and cook the other side also until golden brown.
Add a tbsp or more of ghee while cooking to brown the parathas and make them tastier.
