    Equipment

    • Tava/frying pan, Rolling pin, Mixing bowl

    Materials

    For the Paratha dough

    • 2 cups Shivtara Chakki Atta
    • 1 cup Shivtara Maida
    • 1 tbsp Oil
    • salt to taste

    For the Potato stuffing

    • 3 large boiled and mashed Potatoes
    • 1 finely chopped Onion
    • 1/2 cup chopped Coriander leaves
    • 1/2 cup chopped Mint leaves
    • 2 finely chopped Green Chillies
    • 1 tsp Jeera/Cumin seeds
    • 1 tsp Chilli powder
    • 1 tsp Turmeric powder
    • 1 tsp Garam masala powder
    • 1 tsp Chaat masala
    • 1 tbsp Lemon juice
    • Salt to taste

    Instructions

    Method

    • Mix Shivtara Chakki Atta, Shivtara Maida & salt together in a mixing bowl. Add enough water and knead to a soft dough. Add some oil over the dough ball and cover the bowl with a damp cloth to rest for 30 minutes.
    • In the meantime, mix all the ingredients for the stuffing together and set aside until the dough has finished resting.
    • Next, divide the dough and the stuffing into equal round balls. Flatten the dough ball, out the stuffing ball in the centre and wrap the dough ball around it.
    • Roll this dough ball stuffed with the potato filling out in to a thick paratha or chapati.
    • Cook on a hot Tava or frying pan on both sides till ready. Add ghee as you cook it for added taste and crispy outside.
