How to make stuffed Aloo Parathas

Equipment
- Tava/frying pan, Rolling pin, Mixing bowl
Materials
For the Paratha dough
- 2 cups Shivtara Chakki Atta
- 1 cup Shivtara Maida
- 1 tbsp Oil
- salt to taste
For the Potato stuffing
- 3 large boiled and mashed Potatoes
- 1 finely chopped Onion
- 1/2 cup chopped Coriander leaves
- 1/2 cup chopped Mint leaves
- 2 finely chopped Green Chillies
- 1 tsp Jeera/Cumin seeds
- 1 tsp Chilli powder
- 1 tsp Turmeric powder
- 1 tsp Garam masala powder
- 1 tsp Chaat masala
- 1 tbsp Lemon juice
- Salt to taste
Instructions
Method
- Mix Shivtara Chakki Atta, Shivtara Maida & salt together in a mixing bowl. Add enough water and knead to a soft dough. Add some oil over the dough ball and cover the bowl with a damp cloth to rest for 30 minutes.
- In the meantime, mix all the ingredients for the stuffing together and set aside until the dough has finished resting.
- Next, divide the dough and the stuffing into equal round balls. Flatten the dough ball, out the stuffing ball in the centre and wrap the dough ball around it.
- Roll this dough ball stuffed with the potato filling out in to a thick paratha or chapati.
- Cook on a hot Tava or frying pan on both sides till ready. Add ghee as you cook it for added taste and crispy outside.
